    Has not been mentioned, just the evaporation before putting it back. That’s a great idea with the v hot water! Will def do that and allow to dry after wiping down

    I appreciate all the reply’s!! Hot soapy water + rinse + extra dry :). I’ve been reading too many threads of people who don’t dry their knife well enough after rinsing, and end up rusting them 😄

    What’s the best way to sanitize a carbon steel (I specially have a blue#1), after cutting raw meat with it? A damp towel with dish soap, followed by a clean damp, and then a dry? A run under warm water with soap and then thoroughly dry and apply oil? Thanks for the inputs and suggestions !

    just purchased a Cerax #1500 for about $44. Any one use the Cerax #1500 before? I saw a thread where one user purchased and said it is very smooth and said very comparable to the cerax #3000. In addition, has anyone compared the cut of the Cerax #1500 to the Cerax #1000 (1010 or 2020)?

    I feel that! Very glad to have gotten answers, there is very little out there about the Heiji Santoku, and reviews of it so im trying everything :p. I just need to take 5 minutes and breath before jumping to conclusions, especially int he middle of the night, lesson learned 😳
