Hey guys. I dont do much monosteel like this but thought I would for a change. This is a very light, very sharp K-tip Gyuto.
*205mm blade length
*51mm width at heel
*1.85mm thick above the heel
*1.20mm right as the spine starts to head toward the edge.
*26C3 (1.3% C steel that's cleaner than Hitachi White in terms of P and S) @ 64rc
*Convexed leading to the edge
*Octoganal Wa handle made up of Ironwood, Stabilized maple and Titanium spacer.
