** Halcyon and Marko are both sold **
Good morning KKF, happy Monday! I’ve gone a little crazy this year and have impulsively bought way more knives than any sane person should. I keep telling myself I need to pass along what Im not using on a regular basis, and thus begun a series of listings.
My goal was to sell off the majority over the next couple weeks, and I’m ahead of schedule, so this will most likely be my last BST post. Thank you to all the kind and generous folks who have reached out over the last week or so. I’ve met some really great people and am happy to see much of my collection going to good homes.
I’ve learned so much from this forum and it’s given me the opportunity to try so many amazing knives, so in the spirit of KKF, everything is catch and release or cheaper. I will do my best to include all the info and photos I can provide, along with links to past sales etc.
Please don’t hesitate to ask any questions, and I would be happy to work an extra special deal for a local sale. Thanks for all your kindness and help, looking forward to passing along some knives

SOLD 210mm Tsourkan gyuto SOLD
Bought in 2016 during my early knife days and has seen a decent amount of use in my kitchen. Great profile, steel and heat treat, and excellent cutter.
Some details from Marko in 2016:
“I remember this knife, I made it recently. I moved to this profile from a bit wider, as I find this profile much more efficient in detail work and overall cutting.
The steel is AEB-L, about 61.5-62 RC hard. Heat treatment is a top notch, the steel should sharpen very easily, to razor sharp. I recommend maintaining this steel on a felt with a diamond spray (1 Micron), a few passes on a felt will bring back initial sharpness.
The handle is stabilized maple with ebony accents.
The grind is convex, akin to Mizuno, if you are familiar with this maker.”

Bought off reddit as my 2nd piece of Joe’s work and it’s a good one. S grind, silly sharp, nice stable patina, and a beautiful comfy handle.
