For sale, stainless gyuto in SF100 ( British equivalent of Aeb-l) at 62HRC. The blade is fitted with octagonal walnut handle, brushed brass ferrule. Flat to convex bevels, hand sanded to 500 grit. Rounded and polished spine & choil.
