Still slowly sniping off trophies from my collection to sell in a terrible effort to try to condense/generate some cash.
So up for sale is a rarer 240mm Wakui Suminagashi Blue #2 Gyuto. If you haven’t tried it yet, Wakui’s Blue #2 is pretty sick, relatively easy to sharpen yet holds an edge. Ideal for the pro kitchen setting. This one has been sharpened once. Slapped my usual ironwood/marbled horn handle from Porter Customs onto it. The only con I would say is there is a flaw in the horn, but it’s been sealed and hasn’t cracked anymore since I owned it, about 2 years now, so I doubt it’ll grow.
