Been trying out some smaller stuff these days. Really love all three of these, but something I’ve been chasing for a year popped up and now I need to get knife budget back under control.
Hardent mini-chef, $300 - seriously badass little blade I won’t mind keeping. Great heft and crazy taper (6 to less than 1) for a super small package. Just demolishes alliums and herbs and has enough height to be comfy to all around prep on a smaller scale. Ideal 1-2 person dinner prep knife IMO. 147x49. Cladding is bloomery iron. Happy to clean up the patina/polish for buyer if interested - but it’s got ton of excellent figure. Steel takes a fantastic edge. I’ve used it maybe a half dozen times.
Unshu Yukimitsu Nakiri ($100) - superb steel as always from Kusunoki San, maybe my favorite white for kitchen knives. Grind is super right biased despite the blade being very thin. Gave the right side a prelim polish and a decent amount of KU wore away. Oh well. 155x50.
Wrought iron hunter ($290) - I love this little thing. Wrought iron Damascus cladding, aogami core, and the craziest mirror polish on the steel. I just have no use case for it and I don’t want to see it just sitting in a drawer. 95x30
