I'm very late to this tall petty/short Gyuto discussion, but...

I just purchased a 4.5" steak/parer from Butch Harner through IG - he had a recently made (posted on his IG) 5.5" mini-chef that looked incredibly cool to me, having the characteristic grind and profile of his parer/steak/Gyuto lineup. Super happy with the steak (fruit/veg knife that can swing to in hand work if I don't want to switch knives), but that mini-chef required some discipline not to forget what I was "there" for.

I accidentally ran across something that may be suitable for the OP: an Ealy in stainless AEB-L steel that is famously easy to sharpen at homebutcher. Several utility knives are listed but this one is 160x38mm.

Thanks .
I decided to go for a "standard" 150mm petty in stainless at this time .
And see how that works out .
If the MAC Pro 6"petty had just a tiny bit more height that would have been the obvious choice to pair with my new MTH-80 .
I'll post a follow-up at some point with what I end up with ...
