Very broad, I know... But the other day when slicing chicken breast, octopus and roast beef... I was thinking: dammit, I have 30 knives.. But no Suji to do this??? How can that be??? Lol...

So, I wanna try one. Not willing to spend super big bucks right now (so custom XYZ would be out), but would like to see what's out there...

Carbon preferred, 240-270 mm...
