I just finished this gyuto in Takefu aogami super. The hardness is 62HRC. As usual, the spine and choil is rounded / polished. Convex grind, 500 grit satin finish. Pommele sapele handle with birch & G10 spacer.
Cutting edge - 250mm
Height - 56.5mm
Overall length - 413mm
Spine - at the handle - 3.30mm / middle - 2.50mm / 0.80mm at 10mm from the tip.
Edge midway - 0.95mm / 0.55mm / 0.15mm
Handle - 150mm (19 x 24mm front, 22 x 25.5mm back)
Balance point - at the makers mark
Weight - 236g
