Need to sell off a few knives due to a housing situation.

Letting go of this 180 mm Hiroshi Ashi honyaki santoku, BNIB. Original finish and lacquer is still on. Lots of alloy banding.

Edge length: 185 mm
Height at heel: 46 mm
Spine thickness at heel: 3 mm
Spine thickness 1 cm from edge: 1 mm
Weight: 162 g

I got to try the Passaround ashi honyaki santoku and it was, without a doubt, one of the best performing knives I’ve ever used. I usually don’t like lasers all that much…. But these are seriously magical. GLWS. Wish I could swing it

That knife is on my wall right now. It’s a complete and utter shock just how good it is.

This is what an unsharpened ashi does on an onion when I took it for its first spin……. And for real, this was before I touched up the edge and it would not cut paper towel at all. Geometry on these is totally insane.
