Kochi ironclad gyuto 240x52 mm, 183 g. Spine is 3.69 mm at the pinch
Sad to even post this one and wouldn't mind keeping it, but it isn't getting the use it deserves. The 240 that got me down the rabbit hole, it has excellent f&f with a comfortable spine thickness at the pinch, nice distal taper, rounded everything, subtle and sexy KU finish. Just a complete package. Super thin behind the edge, cuts like a laser but that thicker spine makes it way more comfortable to use for extended periods. The burnt chestnut handle is one of my all-time favorites and refined yet grippy.
The steel is Takefu V2, one of my absolute favorites to sharpen, at least Kochi is across all profiles. Smith is rumored to be Wakui. Takes a screaming edge, and when you need to touch it up it literally only needs 2-3 passes on a 3k to get back to "wow", very rewarding. Decent food release, and will cut anything you put in front of it. Squash all the way down to using that very fine tip for delicate work. Profile has a nice flatter sweet spot with enough curve to accommodate some rock chopping. I have tested it head to head with so many others it it continually kicks ass. Takes a beautiful patina, I can't bring myself to polish it off so you'll have to desecrate it yourself.
Retails $270 before taxes and all that. Asking $245 shipped insured.
