Happy New Year!

One of my New Year’s resolutions is to try a stainless steel clad blue #2 core knife to see if I can handle the reactivity / discolouration / moisture management / etc, but also to get some experience sharpening non-stainless steels.

I’m trying to keep my outlay on this trial fairly minimal, so I’m looking for a fairly cheap stainless steel clad blue #2 core knife, maybe a petty or something smaller to keep the price down. Location wise I’m guessing if it’s already in Australia, then I’d save on shipping costs from overseas, but happy to consider anywhere in the world (I’ll be going on lowest total cost to me). Condition wise I’m not really fussed, beaten up, scratched is fine, not really interested in damascus (as I’ll just end up scratching it up if I’m practicing thinning it), prefer not chipped or rusted (I may well do that myself :) ). It needs to have a handle, but either wa or yo is fine.

Anyway, flick me what you’ve got gathering dust that you want to move on.

Are you dead set on aogami #2? There seems to be more stainless-clad aogami super available. I'm not sure what Australia's shipping/import deals are but this is the first thing that came to mind. They're all the same white-label knife, just different vendors

There are nakiri, santoku, and bunka versions of this knife too. Gyuto was just the easiest that everyone had in stock.


Honestly I'd recommend just diving in with this Kyohei Shindo. Incredible bang for your buck, super thin behind the edge and drastic distal taper, they cut like lasers with a fatter spine. The cladding is quite mellow and the kurouchi does a great job protecting the knife. Plus you get a really nice iteration of aogami #2, I've never so much as microchipped my 3 knives of his.

Edit: It appears CKTG is autoblocked. They call it Harukaze AS series. Sorry to not find exactly what you're looking for.
 
My stainless clad Blue 2 Kohetsu from CKTG is a great knife. Around $100 too and I put it through hell at work.
