This was my first JK. SRS-15 takes a great edge and this knife has a good taper, before they lost that. Original owner, 15+ years, sharpened several times but never taking a lot of steel off.
I have had this one over a decade. It has been sharpened several times and the blade sanded. Original owner.​

This is one of the few Shun's that I think is worth getting. Has some surpising convexity to the grind. It's stainless clad Blue 2 that takes a good edge. A great knife really. Original owner, sharpened twice.
This has been a fantastic knife. Excellent cutter and takes and holds a solid edge. Real slicey. Original owner.​

This was my first Bunka and their great. Miyazaki san is a talented smith. The cladding finish is quite durable. Original owner and sharpened twice.

Tanaka does a great job with Ginsan and his grinds are great performers. Great all arounder with good F&F. KNS purchased original owner and only touched up.

This is a great knife, I just have a lot of carbon k-tips. Shiro Kamo's fit and finish is excellent at this price point. His AS HT is solid. This has the upgraded K&S ebony handle to bring back the balance. Original owner, never sharpened.
This one is thin and a little flexy. I got an ebony handle to move the balance back a little. Original owner​

I had intended to get this to do some stone work, but I decided against going down that rabbit hole. It has perfectly flat bevels and some great antique wrought cladding. I got this from @ok_mode. It is an excellent cutter but I have a ton of bunkas.​

I am the 2nd owner and bought this from another forum member. It has only been touched up, never sharpened. I have no problem keeping this one because it is awesome. I just have too many and deliberately decided not to "connect" with it.

Shigeki Tanaka's ginsan is excellent. Highly recommend that knife, I love mine. It's a great do-it-all midweight that had better food release than you'd suspect.

I am the first owner of the Mazaki. I got it from KnS and it's a 2023 Mazaki. It is carbon steel clad. I upgraded the handle to their Ebony one. Great knife, just redundant.

I am the 2nd owner of the Honyaki that bought here from another forum member. It is an absolute performer and so nimble. I haven't gelled with it deliberately. I will probably regret this one, but decisions must be made. It's got a nice Walkschliff grind. There some scratching near the spine about 5/6 of the way down, nothing major and would probably come right out. Not much of a patina has formed, it isn't super reactive.

100% agree. It's such a great one. I was trying it out and expecting to churn it, but it stayed with me for a while. I would be happy to keep it. His ginsan and grinds are great.
