I’m moving and also getting out of the kitchen to take a job that will allow me time to get into knife making…. So I need to move some knives to make up the difference and that I can’t justify with not being in a pro kitchen soon….. really sad to let any go and might even post up another knife I REALLY don’t want to let go of… but we will see how the finances look in a few days…

**withdrawn** First up, the DP I had previously posted up. DP petty? Baby gyuto? Anyways… wrought clad with I believe boiler steel as the core. 167x58 and I believe it weighs about 180 grams. Will update these specs as it’s off the top of my head and I don’t have my scale handy so I’ll update this post soon. Super fun little knife, only been used a few times and stropped once. Love this thing for so many reasons… but I need cash. I got this from Dan for 350 and will let it go for 315 shipped US.

**sold** Next up is a Tanaka x kyuzo petty. This one hurts. I’m not a petty guy, and this might be the perfect petty imo. 160x40 93g in blue 1 with the yakusugi cedar handle. This handle is soft and warm. I like it a ton more than I figured I would. Only used this one a few times, mainly tip drawing cucumbers and slicing cherry tomatoes at work. Laser performance and truly feels like a baby gyuto. So fun. Never sharpened, only stripped on leather. I bought it for 290 on here, I’ll let it go for 260 shipped US. Won’t be mad if this status around. So price is pretty firm.

**sold** Last (for this post) is my munetoshi butcher. Insane value for the amount of knife you get. It’s saved me at work a ton. Steel is hard and tough white 2, been sharpened a few times and I’ve gone over it with a gesshin 400 twice to try and start a kasumi, but obviously haven’t gone as afar as a real kasumi. It has been tipped (would be easy to bring it back, I just haven’t taken the time), I have torched the handle for improved texture (way better than stock), and as can be seen, has a bit of a gouge in the handle. 115 shipped US

Bump for DP. 300 shipped.

Also adding a HVB petty that’s 170x40mm and 164 grams. Soft iron clad 1095. Mary’s 1095 is like a really crispy white #2. Very stout and comfy in hand with slight nail flex at the edge. Hardly used with original edge (just a few cherry tomatoes, cucumbers, and spam) I just need money and don’t use petty knives much at all. I won this in auction and paid 375 after shipping from AU. Looking for 300 shipped in the US

Bump willing to trade for a stainless/semi stainless knife for a new line job I’m doing where I can’t have a highly reactive blade. Send me offers. If these weren’t as reactive I’d donate one to the cause because they both perform quite well.
 
Had a question about horizontal/vertical onion cuts with the HVB. Here’s a quick and dirty vid to show how well it does on that task. Pretty great considering the heft of this little guy. Meet did a great job on the grind for this one.
