I got this in a trade for my suiboku Blue 1 270mm and I paid an extra $200 on top.

Have been on the edge with this one, but I have to respect the fact that it has been a drawer queen for a very long time now.

The best way I can explain the feel in hand and performance of this is a premium/western jiro. Very similar grind and profile, tall, forward balanced. It performs slightly better for me as it has a really well zero'd in edge and does not wedge or separate onions on tiny dices. I will link a couple onion videos here
The blade also has insane banding and takes up an amazing patina.
Edge retention on this is insane as I understand from the previous owner that it was never sharpened, and I have used it for quite a few meal preps and yet have only really stropped it on a suita.

That knife is unreal! I’m blown away and would take that over a Jiro if given the choice, for sure! Seriously tempted. (Incidentally, there’s seems to be an errant choil shot in the post)

Oh good catch!!! That was my Xerxes UF integral’s choil haha.

For those that don’t know, I can firmly say that Evan makes the best honyaki workhorses, hands down. No other maker can get them as thick, but cuts like a midweight like him. Plus the hamons are all classy and his polish allows for that wave to prominently peek through when your blade has been patina’ed up. His yo handles are also one of the comfiest in the game.

Yea absolutely everything you said here is right. This is such a fun knife. I feel horribly to just keep this in a drawer. Someone will use it more than I do
