I'm always fascinated by other cook's knife rolls and racks—and this is not exclusive to real chefs. Here's the rotation for a few fake chefs. Personally I have a soft spot for Hattori Hanzo's setup—Favreau's the most well equipped and useful.
It would be a fun job being an advisor on what knives to select for a particular film role—taking into consideration the character's preferences, cuisine, what looks good on camera, as well as what's practical in a professional kitchen.

Hattori Hanzo appears to have takobiki, two yanagis, a deba and what looks like either a lefty deba or santoku (small tall gyuto?) in "Kill Bill."
Other actors portraying chefs are Catherine Zeta Jones, Gerard Depardieu, Dwayne Johnson, Steven Seagal.
