Just saying hello. Been lurking on these forums for months. Former professional chef who recently started collecting and learning more about Japanese knives specifically. Also been working on my sharpening skills again and happy they are much improved from when I started more than 10 years ago.

I also just wanted to say thank you to everyone who has spent time posting here before. I’ve learned so much just be sear through these forums. Cheers!

There's a huge archive as well. The best way to approach it is with Google's "site:"-function. E.g. Google
