Up for grabs is a gyuto santoku two knife bundle
First up is the gyuto, a 240 Ohishi Western Ginsan I picked up here on the forums. This was in my daily rotation for a while, usually being my board beater for all sorts of things. I did some crude sand paper work to ease the spine by the pinch and the choil, nothing pretty, but functional. The bevels have also been worked to a convex grind, I believe I left it at a 800 grit synth finish. Usually knives that I know I’m going to have to thin and refinish constantly I don’t bother making pretty, also don’t love polishing stainless

Second is a Fu Rin Za Kan(TF) white#1 santoku. Picked this one up a few years ago came with some flaws(wabi-Sabi?) OOTB, including a dent in the original handle and a chip out of the choil. The handle has been replaced with a really nice piece of Cyprus burl that’s been tapered and smoothed very nicely by the great @birdsfan. It developed some pitting a while back that I never got around to dealing with. I believe the finish is a 800 grit synth as well, although this stainless cladding is very easy to get a nice polish on. As you can guess the steel sharpens up great, and for no a santoku it has a great over all profile with a nice taper at the tip, also comes with a saya.

As the title indicates I’d really like to sell these as a set, as they could be of great value to someone starting off or split up as gifts for co workers.
