Just wanted to share our video of a smithy in Japan handcrafting Bunka knives made from Aogami steel.



The "Bunka" in Bunka knife means "culture," showing its importance in Japanese cooking traditions. They've been created in the late 19th century, and have a unique reverse-tanto tip, similar to a katana.

I have purchased a number of knives from Japanese Food Craftsman after watching the UTUBE videos supplied by https://shop.japanese-food-craftsman.com/ .
All the knives and other craft products have been uniformly excellent such as my Sake Carafe and cups.
I recently viewed the referenced video and ordered one of the knives along with some handmade rice bowls.
I have no relationship to Japanese Food Craftsman.
But it is nice to deal with an entity that gets one closer to the actual craftsman.

I’ve waited until I had some experience using the ‘Curved Back Bunka’ from Nakamura Hamano purchased through Japanese Food Craftsman. $119.99 delivered price.
Simple round wood handle but nicely finished, no sharp edges to get cut on except for the blade while using.
Makes me wonder about the markup put on this type of Japanese knife by International vendors?
It seems like the Internet now abounds with Japanese knives at all sorts of price ranges.
Better then a Takeda of which I acquired a-few before Shosui stopped custom orders.
I think they are on a par except for the wa handle.
Yesterday I prepared a simple Korean dinner with Mexican Chu-Toro, Pork Jowl and Waygu beef, all purchased from H-Mart. They were cutting up the underside of a Bluefin yesterday, and I got to purchase the piece that I wanted.
Toro does not freeze well, so I only purchase Akami for later use.
The bunka although short for this task performed well and the really gorgeous Chu-Toro somewhat easily released after each cut.
Matsutake mushrooms followed that could have used a longer blade but the cut was precise and easy.
I then turned my attention to the Pork Jowl.
I put small cuts into the fat layer to keep the cut from curling during cooking.
No problem with the bunka.
