Knives are once again piling up, overflowing my drawers and knife rolls, soon they will create a tripping hazard. Time to sell! Heiji Semi Stainless
I got this second hand. It has that great Heiji core steel and a low bevel grind that really delivers excellent food separation. It was my go-to French onon soup knife for years until I got a couple of S-Grinds. It has a D-shaped handle that I fashioned from stabilized amboyna burl and bocota and comes with a matching padauk saya.

Nakagawa Ginsan 240 - SOLD
I got this in very good used condition from a well known member and used in sparingly in a pro setting. It is a good cutter with steel that lives up to its reputation. I have found that i prefer a longer knife for prep at work. (as a result, you will probably soon see a Sukenari ZDP 240 listed soon) I also have discovered that I prefer a convex grind to a wide bevel. This knife has been outfitted with a stabilized cherry burl and streaked horn octo handle with brass and g10 spacers. It comes with a matching cherry saya.

Gihei Hap40 200 - SOLD
This was one of my earliest "good" knife purchases. It has been my favorite service line knife for years, short, nimble, and once sharpened, it holds a serviceable edge for a very long time. Of the 3 knives I am listing today, this is the handle/saya combo i like the most.. It is a crest shaped handle from stabilized walnut with purple heart/g10 spacers. The matching saya is carved from a beautiful chunk of highly figured walnut.
