Newb here. Split the months between NJ and Maine. Have had a set of Japanese knives for about 15 years now but recently did a deep dive and got a newer set to have in NJ. Original will be in Maine. Move to Maine is recent. Have to fend for myself in NJ hence the focus on knives and cooking. Got the second set today and I can attest to their sharpness with 2 bandaids. A true pleasure to use. Cooking will be a lot more fun now. Hope to learn much from the forum. Thanks for being here and letting me in!
