Can't wait to learn from all of the experienced knife owners on this forum. I have recently become addicted to all things chef knives after owning a set of Wusthof Classics and beginning to switch to Japanese style knifes. Still mostly on western stainless/semi stainless knives but looking to get into other steel types and shapes soon
