Good afternoon, all!
I have appreciated knives since getting my first pocketknife many (many) years ago, but only recently have been enjoying better-quality kitchen cutlery. I found a handful of K Sabatier kitchen knives at a local thrift shop that only needed an edge touch-up and some general TLC, and was amazed that the balance and handling were SO much better than my existing kitchen knives. A couple of weeks later, I stumbled across nine Henckels kitchen knives in the same thrift shop that were terribly dull (but that seemed to be their only problem), so I have been spending some time each morning getting them rehabbed on the stones.
I'm an IT professional by trade, working here on the hurricane bumper of the United States in extreme eastern North Carolina. Looking forward to doing a great deal of reading here!
