Hello folks, new user here from Toronto, ended up buying a Shun chef's knife while looking to upgrade my generic knife block knives. This started an expensive wonderful journey, Current collection: Masakage Koishi Gyuto, Yu Kurosaki Bunka, Yoshimi Kato Nakiri, Sakai Kikumori Yanagiba, Sakai Takayuki Petty, Yoshihiro Gyuto, a number of Shun knives; 8" Chef's knife, 9.5" slicer, 7" santoku, bread knife, brisket knife, paring knife, honesuki, curved boning knife - some of these Shun's I'm looking at gifting to family members and replacing with other knifemakers.
