Hello everyone! I am an engineer/home chef who decided, about a year ago, to try a high quality knife. That knife (a Yoshikane gyuto) piqued my interest in Japanese knives and I now have a small collection from several different makers. I am slowly developing a feel for what features/specs I prefer. I have been lurking here for a while trying to learn as much as I can. I have learned:
1. Terayasu Fujiwara Denka is one of the best performing knives you can buy.
2. Terayasu Fujiwara Denka is an overpriced, crudely finished lump of steel with wide variances and little quality control.
3. Takeda is one of the best cutters with great food release.
4. Takeda is a crudely finished wedge monster with wide variances and little quality control.
5. I must one day own a TF Denka and a Takeda Actually, the Takeda is in the mail as I type this.
