Hey all, I’m 35 from Richmond VA and been cooking my whole life. I have a decent selection of hunting knives but I don’t own a proper chef knife. I do most of my kitchen task with a $7 victorinox pairing knife! sadly it’s the sharpest kitchen knife I own. I’m hoping to upgrade to a decent Japanese knife.

What sorts of hunting knives do you use?
 
I have 2 Randall’s that were gifted to me by a friend, bark river bravo 1 and fox river, knives of Alaska I’ve the cub bear and the bush camp and I have several others from buck and Gerber. The ones I use the most are buck 119, 110 (this is the one I carry to stand for gutting) and Victorinox 6” boning knife. I can pretty much process the deer with a couple of boning knives and maybe a fillet knife. They hold the edge pretty well.
 
If victorinox chef knife was as nice as their boning knives I’d buy one without hesitation. The one I tested was rather dull. I wasn’t impressed.
