Hi, glad to be here. These are my knives. I’d like to learn more about the older ones and dating knives and this forum has a lot of information on that. I also have several handmade knives and I’d like to take care and sharpen them properly.

Yeah! Just bought a couple of these last week and used them to cook tonight. From left to right. Ja henckels 14 inch blade carbon steel knife. RH Forschner 14 inch carbon steel. Two 12 inch bon gourmet stainless knives. An unmarked carbon steel knife with an ornate pewter bolster. Two cheap forgecraft hi-carbon knives

Here’s my handcrafted knives from left to right. Bloodroot blades paring knife. Crooked river forge 9 inch chef knife, crooked river forge paring knife, crooked river forge butcher knife, and a cheap wildfire cutlery 10 inch chef knife. Last picture I threw in the ja henckels 14 inch chef knife for size comparison.

You’re the guy that posted that Henckels on reddit asking if it was stainless, right? I commented that it was probably pre 1960. I didn’t realize it had Birds Eye rivets in the handle. That would lead me to speculate it’s much earlier, probably pre-war. I only have one knife with those rivets, a WWI era Henckels. Nice one!

Very cool! Yeah I’ve had some trouble dating it. I’ve seen American advertisements from 1910-1940 that are marked “108-14” or say “twinworks” but this knife doesn’t have those markings and it doesn’t have markings like the 1950s-1970 ads either. I didn’t know about the rivets changing. I’m hoping to find more research on this forum.

And to answer your question I am the person from Reddit haha. I cut up an onion and it’s definitely carbon steel so I’m happy
