Hi all I'm Nico and am a professional cook. After having my knife roll part ways with me this summer season I had to go on the hunt for replacements. After growing tired with my ux10's and a random sg2 that were among a few others lost with the roll. This forum helped me spend too much money on replacements. A few Gingas and Takadas have just started what I've learned is a dangerous path to go down.
