I am not exactly super informed yet not wet behind the ears either. My daily driver is a Kagekiyo - 240MM Shirogami #2 Kiritsuke. My EDC knife is one of the 3, Red Orca (Yoshihiko Akitomo) knives, Or one of my higonokami friction folders depending on mood.

Prefer Shirogami to Aogami but will take either over stainless lol
