Hi guys,
knife nerd here. Been working as a chef for about 21 years now.... wow. I have always liked knives and have a decent collection. I appreciate all knives. Love my folding pocket knives and kitchen knives the most.
I mostly use all Japanese knives these days. i really have too many to list but here are some that are in rotation at work at the moment
multiple Masakage koishi
multiple Yoshikane shirogami and skd
multiple Nakagawa blue #1
Anryu gyuto 240
multiple Carter cutlery
multiple Matsubura gyutos
Hado blue #1 damascus
multiple Yu kurosaki r2
and so on and so on.....
i have way too many, but hey its been over 20 years. I still have my first global chef knife that i got before i went off to cooking school all those years ago.
anyway, great to meet all you nice people and look forward to chatting about some fine knives with you.
