Hey folks, I would love your thoughts on these three profiles. All three of these are 210 gyutos 54-59mm height, and I'm curious as to how these grinds will affect food release and cutting performance. Buying as a gift for my brother who prefers taller gyutos. Any thoughts would be appreciated!

Is he left or right handed. I’m no expert but… The bottom two pictures look like they are flat on the right (left sid run the picture cause you flip it). While the right side of the blade is super flat
 
Wonder if the last 2 have a low spot at the choil on the right side. Would give the impression of being left-hand biased.
 
I think they perform more or less the same, with the chance of the tsuchime having a bit more food release.
I’m guessing your brother needs a knife that has a low maintenance, since going for stainless clad.
I bought my dad a 210 Matsubara white 1 iron clad.
He doesn’t take very good care of it, but no major rust spots and the KU protects it very nicely.

What I’m saying here is. You can safely buy him any of the knives. It’s a good quality product at a “low” price.
 
The asymmetry might not be a major concern, and the food release could be similar across the three.
 
Meesterslijpers also have the tsuchime 210 B2 albeit with a different handle. I have one and like it.

I doubt that there's much diference in food release between the tsuchime and nashiji inishes.
 
Thanks for the insight! I didn't know that eesterslijpers offered a tsuchime 210 B2 with a different handle.
 
These out-of-focus photos can’t accurately represent the true condition of the blade. I have two pictures here of the same model knife, taken by different sellers.
Some out-of-focus photos can make the blade appear very sharp, but the actual condition might be different. You can't fully trust such photos.
