Hi.. new to the forum, and actually new to collecting knives in general. Been using my trusty Zwilling Classic knife set for years and never knew any better, and then one day, I clicked on some youtube video on japanese knives and down the rabbit hole I went. Thus far, I only have 1 japanese knife to my name, a recently acquired Masamoto KS which was sort of an impulse buy during my recent vacation to Japan. Looking to learn more about kitchen knives while still hopefully not overspending on them.
