Really happy to be part of the forum. I am based in Melbourne and work as a chef/baker. My interest in Japanese knives and tools has been long but I only recently started purchasing hand forged knives. I have two gyutos (240mm & 210mm), a petty (150mm) and a sujihiki (270mm) and Japanese bread knife (270mm) plus some global ones and some cheap victorinox paring and turning knives. I am basically building a set for home and a set for work. It’s a growing obsession and I am looking to get a second petty for home. I am also considering what knife type could be added next to my collection. Thanks in advance for the help and the knowledge sharing.
