Welcome. What kinds of knives do you currently use?
I'm entirely new.. mainly because I share knives with others in my household and they beat up knives like no tomorrow. Good thing from that is I have a lot of sharpening practice. Currently Vnox fibrox and Tojiro itk knives and some cheap Vietnamese paring knives. Moving soon and with that I can have peace of mind that my knives won't be tossed around. Planning on getting a Masakage Shimo, but from what I've seen there's usually a sale in Feb? I'm open to suggestions for a intro into "nicer" knives though. Budget around $300-400. Looking to get a 240-255mm Gyuto and a 120-150 petty
