New to kitchen knife forums. I've been cooking for 7-8 years now in the bay area and have been looking for a

Takeda NAS Sujihiki 240-270mm for many years now. My coworkers told me to go on this forum.​


I've worked at SPQR, Mister Jius, Funky Elephant, Snail Bar, Cream Co, Soba Ichi, and Chez Panisse. I usually use a CKK Cleaver for alot of my vegetable knife work and a small Takeda Hamono NAS Super Petty for all my small tasks and chicken butchery.
