A couple of weeks ago I thought that it was finally time to figure out how to sharpen my old Wüsthof properly. A few days later I had already ordered a gyuto from JNS and was fervently watching whetstone tutorials. While I was searching for information this forum turned up quite often, and in fact my choice of knife was partly based on recommendations from old posts here. As a new and confused knife owner I figured I'd join and ask a few questions myself.
