OK, I bought a lot of knives and decided to let go at least one. This is probably the best finished knife of all, which is part of why I'm so reluctant to use it lol.

Nice convex grind, f'n'f is exceptional, as is typical for Hitohira's knives.

It has been used to cook one veggie meal, signs of wear are absolutely minimal.

There is some patina and perhaps some light marks in the surface just from handling it.

Generally very close to new. No stropping or sharpening, original edge.

Weight is 204g, 228x52mm (It's a Sakai 240 type)

New pics and videos here, price reduced to 450€ + shipping minus 15€.

Two things I want to point out. Both of these are in my eyes really small blemishes and to even notice one has to inspect quite closely.

1. I noticed that the front .5 mm of the tip is ever so slightly bent. Should be easy to correct, you only see it when rotating the knife in the light. Here's a video:



2. There are three spots near the blade road. It is possible that this was every early beginning stage of pitting. I am convinced it is minimal, since I only used the knife once and then oiled it again. It can't be felt when running the finger over it. I'm confident this will go out with thinning when the knife is used and will never get close to the cutting edge.
Again, only visible with the Macro lens and on close inspection. Compare to the look of the whole knife. But I want to point it out to have clarity about it.

I have a Togashi, and it is hard to say just how beautiful and well put together these knives are. They are my personal favorite out of Sakai so far. I have a couple Y Tanaka and myojin, but I likes these the best. The profile has some big knife energy but is nimble and perfectly balanced, and the shape really suits me. Super recommend these. If you haven't tried one, just do it and worry about the rent later.
 
Agree 100 % @JakeLoveshighCarbon . I have another Togashi that is one of my most-loved and often-used Gyutos.
Wouldn't be selling this one if there weren't other things I desire even more than two Togashi 240s.

That being said, if it doesn't go at this price, I will keep it and also be fine with that :)
