Hi guys,

I've been lurking this forum for a while and finally decided to create an account since I find some of the posts in here really helpful (love the one where you guys post what you are cooking) and it looks like a friendly community.
I am from Spain although I've been living in the UK for 4 years, I love cooking and that's been my job in the last few years but I'm considering a career change now. Anyways I love knives but I can't really afford any fancy ones,I'm a Victorinox boy 😬 I've worked with some people who had japanese knives and I've always loved them, hopefully I'll be able to afford one soon!

If you sharpen yourself, are fine with carbon steel and are right-handed: there are a lot of very affordable Japanese carbons with a Western handle, often requiring some thinning and a good sharpening. Once done they will probably outperform anything you've ever handled.

I am fine with carbon steel and do know how to sharpen as well I'm just a bit lost with all the manufacturers, types of steel, etc. I will eventually make a post to ask for recommendations.
