I have a Starter going. I got some from a friend for the sole purpose of making some English muffins. I’ll feed it for awhile see how this plays out. Mine will die when I vacation for sure. Haha. Maybe I’ll slow it down in the fridge.

You guys get a babysitter or what:D?

It's hella fun. Refrigerator is totally adequate if just going for a few days or even a few weeks. There are some preparations that can help, too, if you need longer storage.
 
Baby steps I suppose.

This is where I’m at now. 2nd rise, kinda shaggy. I’m not the best dough roller.

i’ve had my current starter for seven years or so. during periods of not baking i just leave it in the fridge. i’ve left it for 4–6 months several times. takes just one feeding to wake it, and about four feedings for it to be in good game shape.
