Heyo Im Devin.
I'm a prototype machinist and millwright so know the value in owning nice tools. I've started going to friends houses and teaching them how to make dumplings. Though I'm always horrified at the knives they all have. I've never actually bought myself a nice kitchen knife (still use a set of cutco knives my mom gave me 15yrs ago). Since I know how how to sharpen I have actually kept them in decent working order but curious what some proper steel will give me. I have lots of smaller stones and sharpening equpiment just more suited to smaller items but can sharpen knives on my stones if needed. I'll be buying larger stones as I start getting some nice knifes for myself.

Anyway I'll make a proper "what knife to buy thread in a bit" after I do some more lurking so I hopefully can ask intelligent questions.

I also have a set of Cutco knives that are handme downs. They are really nice but as soon as I bought my first Japanese knife (

Moritaka Hamono Aogami #2 Nakiri 165mm), it was over. Japanese knives at a similar price point to Cutco knives are lifetimes ahead. I guess Cutco knives are "tougher"/thicker but the Japanese knives I have bought are well worth the caution.

 
Saw that Carbon Knife Co is 15min from my work so stopped by today and picked up a Tsunehisa AS Kurouchi Santoku. Looking to pick up a cleaver or a nakiri next.
 
welcome! i have some cutcos too. they're decent (if you keep them sharp), but i think you'll have fun with something new. at a minimum, you'll enjoy better edge retention with nicer steel and appropriate HT. your new AS knife should blow it away for sure.
