For sale today I have something special. It is a 242 Isasmedjan honyaki gyuto, polished by Knivfluencer (check IG). After the polish the knife got its current handle installed by Jonas (Isasmedjan). The handle is a dark ebony, with a cross-cut ebony bolster. This is the best looking honyaki gyuto I have seen.
Knife is not a laser, but it is zero ground with a very small edge bevel and a very good cutter.
Selling because I’m thinning out the collection, and this deserves to live in a place where it sees more use.
Condition/use

The polish is extraordinary with lots of details showing. In the videos it’s possible to see that it’s a mirror polish, but also that there’s lots of activity in the steel.
The knife was polished about a year or so ago. After which I used it a few times and it got a faint patina. I re-finished, re-etched, and put the knife away. There is some light patina after about a year of storage in lots of oil and a soft-lined blade guard. There is also some patina just at the bolster, since I did not remove the handle for the etch.
I can’t fault the polish. But the finish can be improved with some gentle removal of the light patina. The finish can be further improved should one want to remove the handle and re-etch the blade.
