I purchased this on the forum and haven’t used it. The condition is unused /Un-sharpened as I received it. I protected the hand signed note and stored it outside the box because the brass pins were a little “proud” when I received it. I applied pure tsubuki oil on the wood which helped immensely but you can still feel it slightly, though almost impossible to see with my naked eye. I’ve included a photo trying my best to zoom in on the pins to show what I’m talking about.
I think it is a stunning piece of work and honestly I know santoku’s don’t get a lot of love on this forum, but it appears to me to be more of a short gyuto. I will try and answer any questions you have but I’m not as experienced in kitchen knives compared to a lot of the members here. My experience is more towards traditional custom folding knives and fixed blades.
I attempted a choil shot. I don’t think it is what is referred to as a laser. The thinnest knife have is a Kamon Santoku and this Jiro is no where as thin and flexible at the tip.
I’m selling for $580 shipped via USPS conus (purchased for $550 plus shipping) . I don’t have a lot of feed back here but I can reference several people I have made purchases from on this forum. I will also pay the PayPal fees on my end to make sure the PayPal policy is adhered to.
