Yeah so recently I received all my yearly knife karma in one go and somehow landed three Jiros in the same week.

I'm not one for hoarding, so I'm going to keep at least one (probably the 255mm) and test the waters for offering the others as trade bait for some other knives i've been wanting to try.

The list in the post title is reasonably exhaustive, essentially I'd like to enter the world of rugged n tall premium workhorses from some of our most loved western makers here on the forum. I am primarily interested in gyuto's from 220-270mm in length and on the taller side, and interesting cladding for polishing bevels is a huge plus. Would love something with wrought.

The Jiro's I currently have are:

#077 - 180mm Nakiri (used, polished and possibly thinned, with custom handle and saya)
#229 - 240mm Yo Gyuto (used for one meal thus far, still has OOTB edge)
#459 - 255mm Yo Gyuto (BNIB)

I have (understandably) received quite a few messages about selling these outright, but at the moment I am only interested in setting up some form of trade. Thanks for your understanding!

I think you pretty much cover his blade making evolution in those 3 knives. His grinds have changed considerably. GL flushing out something you want.

Looks like the 240 Gyuto is off to a new home, thanks KKF!

I’ll leave this up for now in case anyone is interested in the Nakiri or wants to sell me anything in my list, but the 255 will be staying with me 😊
 
Trade on the 240 didn't quite come through in the end, so everything is back available again!
