I am transitioning away from buying my knives from amazon and instead listening to the advice on this forum.. unfortunately i had decided on J KNIVES but the website is not accepting orders.. does anybody know what's going on there? I did order a Kochi the other day but did not really understand beforehand that i just ordered a carbon knife and i'm not sure if that is a good idea for me since I only use stainless typically. I dont like the thought that my knife could rust easily just if i did not wipe it off very well (even though I do typically take good care and keep them clean) I really like the look of the knives on J KNIVES and they are stainless i think, right? If anybody can give some advice i'd love to hear it.
 
Unless you're really deadset on those specific handles I don't really see any compelling reasons to shop with them. It's basically your run of the mill standard Japanese OEM knives sold at a significant premium.
How much of an issue carbon knives are for you is hard to say. Some happily use carbon for everything, others hate it; it's very personal.

Where would you recommend shopping at instead of j knives?
