Hey all! I recently took a collection picture trying to figure out what to keep and what to sell off for the new year. Post yours here if you have one laying around.

I was thinking about picking up a sab. How often do you use them vs the Japanese side of the collection?
Honestly not that much. I went through a vintage phase when I was learning how to thin and repair knives. 6 or so of those vintage in the picture have been sold.

The ones I use most are:

Forgecraft stiff boner. For breaking down around complex bones like pork shoulder, it’s the GOAT.

Dexter 16” ham knife. My wife loves it for cutting cookie bars. Also fantastic for big watermellons.

Forgecraft chef. It’s a fantastic knife and since I thinned it pretty heavily, it performs really well.

The sabs are really nice though. I’ll use them sometimes just to mix things up. With the integral bolster and finger guard, a lot of the mass is right under the pinch, so balance feels very whippy, for lack of a better term.
