Up for sale are two JKI Kochi's. The gyuto has a fresh edge from Ryan Swanson. Both are in excellent condition and come with their respective boxes. Handles are burnt chestnut with black buffalo horn ferules. They are an incredible value which is why Jon has a hard time keeping them in stock.

Nakiri is 183x54 for $180

Someone should snag that Kochi nakiri!

I had one and sold it "because I'm not a nakiri guy." I Instantly regretted it: turns out that while I'm not a nakiri guy, I'm definitely a Kochi nakiri guy. Luckily, about six months ago, Jon found one when he was cleaning his shop and I bought it. I'm so glad I did! It's a stellar cutter, and the V2 steel is one of the best.

Is this fully stainless?

No. V2 is a high carbon steel. The cladding is also reactive. It has a stable patina.
