Kochi KU Gyuto 241x52mm
V2 Core with Iron Cladding
Burnt chestnut + buffalo octo handle
This is the tallest of the Kochis I've had. Maker not officially confirmed, but it has your typical Wakui specs. Thick spine at the heel with strong distal taper, excellent edge profile, and thin midweight 50/50 grind behind the edge. The spine and choil are comfortably rounded. Weight is forward balanced, even with the burnt chestnut handle.
I did a full polish on it some time ago to brighten up the core leave a soft kasumi on the cladding. If you dig around my previous posts, there's probably additional details from a while back.
