Originally purchased from JapaneseKnifeImport, Paid $270USD, looking to sell for $230USD, PayPal and Ship included, I use UPS, unless asked otherwise. CONUS only. Some use, very lightly, only on veggies, probably 10 minutes total. Such a thin knife! Sorry for the short post. Hope this interests you! Thanks!

Kochi is so cheap it seems like one of those impulse Homebutcher buys that you buy because it's cheap, then eventually realize you never use it and get rid of it 3 months down the line.

But it's not. It's the cheapest non-beater gyuto in my collection and it's not leaving anytime soon. Definitely holds its weight against knives that cost 2x as much

how is the food release?
is anything known about the mystery steel?
It's a wonderful knife. Steel is Takefu V2, often described as in-between Shirogami and Aogami #2. In my experience it's closer to shirogami; very easy and rewarding to sharpen, takes an excellent edge. Just a pass or two on a high grit stone as a touch up will have you smiling and thinking you're good at this.

I did a little comparison here:

And here is a video of Kochi food release in action:
