I'm looking to put a new handle on my Honesuki. My preference in general for my knife handles are woods like ebony, rosewood, ambonya, etc.
However, those handles very rarely get anything on them. My honesuki, on the other hand, will very often get raw chicken juices on the handle, which means I'll need to be able to wash that handle thoroughly.

With that in mind, I'm thinking I should put a handle on it made from something like stabilized wood or resin or something of the sort for ease of cleaning without worrying about damaging the handle.

Any suggestions?

Don't look at me, the ho wood on my most used chicken knives does just fine. I tend to keep my knife hand cleaner anyway. A good scrub and wash and it's fine. I'm the same with my cutting boards. I know it freaks some people out.

You can hand wash pretty much any handle material, either as is or after you apply some form of finishing oil.
