I have a budget of $225 to throw at a new knife. I don't NEED any particular shapes at the moment, so this is purely a because I want a new knife purchase.
I'm looking for something with at least 50mm of height at the heel, with a decently long flat spot at the heel for push cutting veg, but still with a decent curve toward the tip for rock chopping. Most likely looking at something like a Bunka or Gyuto. Perhaps a Kiri cleaver?
I want a Wa handle, and prefer carbon steel, but open to stainless options as well.
